Description:India’s popular snack that finds a place in almost every chaat shop - Samosa.Tastes best with sweet chutney and green chutney. A crisp exterior filled with a spicy potato stuffing that goes very well over a hot cup of tea especially on a rain filled, cold day.
Ingredients
Green peas,blanched - 1/2 cup
Paneer (cottage cheese) - 1/2 cup grated
Onion - 1 cup, finely chopped
Samosa patti/sheets - 8
Red chilli powder - 1/4 tsp
Ginger- 1/2 inch piece, grated
Chaat masala - 1/2 tsp
Green chillies - 1 tsp, finely chopped
Garam masala powder - 1/2 tsp
Fresh coriander leaves - 1 tsp, finely chopped
Salt as needed
Oil as needed

Method
- Heat sufficient oil in a pan on medium heat. Add chopped onions, peas, green chillies, ginger, coriander leaves, all dry masalas and salt.
- Add cottage cheese and mix well.Now cool the filling.
- Place a samosa sheet on the table top, rub it lightly with maida water. Place a small portion of filling at one end and fold into a triangular samosa. Seal edges well using maida water and pressing gently.
- Make remaining samosas in a similar way.
- Slide them into hot oil and deep fry till golden and crisp. Drain on tissue paper. Serve hot.
- Or heat them in an Air fryer for 12- 15 min till golden brown.

Tips
- You can make samosa sheets urself at home.Mix maida with salt, oil, ghee and combine to form a crumbly mixture. Now slowly add enough water to make a pliable dough, not too soft. Divide the dough and shape into balls. Keep aside covered with moist cloth for 15-20 mts.
- Filling of your choice can be made.
- Health conscious people can brush samosas with oil and grill it instead of deep frying in oil.
