Description: My Mom's favorite and am sure for many others its the first option to order in a chaat shop. Pav bhaji is not only tasty but also stomach filling with lots of nutritional values.
People enjoy eating it along with fried pavs and butter. Ah!! It takes a whole lot of ingredients to make it but preparation is not that complicated. Why not try it at home instead of heading to market every time for relishing it. I gave it a little twist by serving it in Martini glasses.

Ingredients
Potatoes - 2 (medium size)
Cauliflower - 1/2 cup (finely chopped)
Cabbage - 1/2 cup (finely chopped)
Carrot - 1/2 cup (finely chopped)
French Beans(optional) - 1/2 cup (finely chopped)
Onion - 2 (finely chopped)
Tomatos - 2 (finely chopped)
Ginger garlic paste - 1 tsp
Pav Bhaji Masala - 2 tbsp
1 tsp chilly powder or freshly pounded 1-2 dry deseeded red chilies (the latter works much better and imparts a beautiful red color to the bhaji)
Turmeric powder - 1/2 tsp
Pav buns/ Bread - 12
Green Chutney - 2 tsp
butter as needed
Salt as needed
Oil as needed

Method
- Boil all the vegetables except onions and tomatoes in a pressure cooker or microwave oven.
- Mash the vegetables and keep aside.
- In a pan, add half measure butter and half measure oil.
- When the butter melts, add chopped onions and fry till they become transparent. Now add the ginger-garlic paste.
- Fry till the raw smell of the ginger-garlic paste disappears.
- Add the tomatoes and fry them till they become soft and mushy.
- Now add the chilly powder, turmeric powder and pav bhaji masala.
- Mix the dry masalas well and fry for few minutes.
- Now add the mashed vegetables.
- Combine the mashed vegetables well with the masala.
- Add some water. Keep on stirring and let the vegetable simmer for 7-8 minutes.
- When done ,switch off the fire and add 2tsp of butter on top of bhaji and mix well.
- Heat some butter on pan and roast the pavs by slicing them into two halves, or make thin slices of bread and roast them on both the sides.
- When done, either garnish with coriander leaves, onions and lime on a plate with pavs, or in a martini glass.
- To server in martini glass first add 2 tsp of green chutney and some finely chopped onions in martini glass. Now carefully fill the glass with bhaji and top it with some coriander leaves and some butter as shown in the above pic.

Tips
- You can use almost any vegetables to make the bhaji, but keep the potato base. You can also try vegetables such as cabbage, bell pepper, and eggplant.
- Make sure you mash the bhaji well. Bhaji consistency should not be very thick nor too liquid.
- Pav bhaji tastes best with butter flavor, so make sure u add some butter while serving.
