Method
- Mix water, 2 tsp oil and flour and knead it to make a soft dough.
- Leave the dough for about half an hour.
- Mean while add salt, chili powder, coriander powder, amcur, chopped onions, corainder leaves (optional) to the potatoes and mix thoroughly to prepare the stuffing.
- Now roll out small balls out of the dough.
- Take a piece of dough. Roll it out in a small circle. Now put the potato filling in the center of the rolled out dough.
- Take it in your palm and bring all the edges together. Press the resulting dough gently and dust it with flour.
- Flatten to the size of roti. You can use 2 butter papers (plastic cover) and flatten the roti in between them to avoid sticking edges.
- Place the paratha on a preheated griddle. After some time reverse the side of paratha. Do it when golden brown patches appear on first side. Sprinkle little oil/butter and then flip again.
- Hot Paratha is ready. Serve with butter, curd or pickle.

Tips
- The stuffing can be made according to your taste and liking. You can also add chaat masala, jeera powder, rock salt, coriander powder.
- You can make different stuffing using veggies like peas, carrot, french beans, also grated cheese and paneer, to make it more nutritious and have your mix veg paratha.
- Always cut the onions, chillies, corainder leaves very finely. Also, the potato should be mashed very well. There should not be any lumps or small pieces in it. This is so, so that, the prarathas do not break while rolling.
- You can also make parathas in this way. Take two medium sized balls from the dough and roll these into a circle.Take a portion of the stuffing and spread it on one of the rolled dough.Cover this dough with the second rolled dough.Press the edges of both the rolled dough firmly to flatten and then heat both the sides.
