JOWAR ROTI / JOLADA ROTTI RECIPE / JOWAR KI BHAKRI / SORGHUM FLAT BREAD (Easy microwave method)

Description: Jolada rotti / Jowar rotti, or bhakri is very popular flat bread in North Karnataka region. In fact, it is their staple food, in fact while walking on their streets in the evening makes you hear the sounds of beating pan with palm from almost every house. Jola / Jowar / Sorghum is a high-protein, cholesterol-free and it is the source of essential nutrients like fiber, iron, phosphorus. Additionally,it is gluten free. From what i read and heard, a lot of experience is required in making these in the traditional way.The dough is prepared by mixing the jowar flour with hot boiling water and then the roti/rotti is spread using the palm. To make rottis round, thin and soft in this method needs lot of experience and patience. But I was first introduced to this wonderful, healthy, and delicious flat bread or rotti by my mother who made this easily in minutes and they were soft, round, thin just perfect. Well am going to share same secrets with you. By preparing rottis in this method they can be kept soft for hours, so you can take them for lunch box as well.

Jowar flour (Jolad hittu) - 1 cup
Water - 1 and 1/3 cups
Maida (optional) - 1 tsp
Butter as needed
Salt as needed

Ingredients
Jowar flour (Jolad hittu) - 1 cup
Water - 1 and 1/3 cups
Maida (optional) - 1 tsp
Butter as needed
Salt as needed

Method
- In a microwave safe bowl heat water, 1 tsp oil and salt for 2 min without lid as shown in first image.
- After 2 min remove from microwave, in boiling water add maida, Jowar flour and mix continuously till everything is mixed well with out any lumps as shown in the second image.
- Now close the container with lid (use lid with a vent) and microwave it for 1 min 30 seconds.
- Remove the lid, mix well and microwave again for 2 min with out the lid.
- Now the batter is ready as shown in below image. When it is still hot, knead the dough on a flat board.
- Am using a roti presser as shown in below image, which makes my process easy and efficient. I use a plastic cover or butter paper in between the presser.
- If you do not have a presser i would suggest use a plastic cover, grease it with some oil, place the dough in between and roll it with a rolling pin. Its much easier and neater.
- Now take around 2 tbsp dough or small lemon size dough. Make a ball and flatten it as shown in the image below.
- Use a plastic cover between the presser, grease it with some oil, place the dough in between, close and press the presser. It will be ready as shown below image.
- Heat a flat pan. Slowly take pressed rotti out the presser and put it on the hot pan.
- Cook for 30 seconds and flip to other side. As the dough will be very soft be careful while flipping for the first time.
- Now apply 1/4th tsp of butter and flip it to the other side. Repeat the same process for the other side as well. Rotti will be ready as shown in the image below.
- Enjoy with Ennegayi (brinjal curry), or any side dish of your choice.
- Repeat the same procedure with the remaining dough.

Tips
- If you do not have a microwave, heat water in a vessel and add salt. When it starts boiling, add the flour and mix continuously till all the water is absorbed. Take off the heat and repeat the same procedure.
- If you want rootis to be crispy as well as soft for longer time, press rotti when the dough is still warm.
- Maida(All purpose flour) is optional, it is added to bind the dough properly as jowar is gluten free.
- In this microwave method, water measurement plays an important role.
- Same procedure can be used to make RICE FLOUR ROTTI (akki rotti), only the water measurment changes to 2 cupinstead of 1+1/3 cup.
