Description: Think of Mexican and tacos are the first dish that comes to mind. Making tacos involves a laborious process, which pushes many to go for the readymade options. However, anything made at home is always more tasty and satisfying, and Mexican Tacos are no exception to this rule. But I made it my way with the ingredients I had in my pantry, so that my readers also find it simple and easy to try. Only thing you need to get specially is taco shells. I used the baked taco shells that are easily available in market.
Ingredients
For stuffing:
Butter, softened - 1 tbsp
Sweet Corn (Frozen/steamed) - 1 cup
Spinach leaves (chopped) - 1 cup
Onion (finely chopped) - 1
Tomato (finely chopped) - 1
Chili Powder - 1/2 tsp
Black Pepper - 1 tsp
Salt as needed
To serve:
Ready-made taco shells - 8
Avocado - 1
Lemon - 1/2
Ice burg lettuce - 1 cup

Method
For Stuffing:
For Stuffing:
- For the stuffing, heat butter in a non stick pan, add onions and fry till they turn transparent.
- Then add boiled sweet corn, chopped spinach, tomato and cook with a lid for about 2 min. Do not overcook it.
- Once done add chili powder, pepper and salt. Let this mixture cook for some time. Stuffing is ready.
- Scoop out avocado pulp and mash it well using a fork or blender.
- Add lemon juice and some salt to it and mix it well untill u achieve a creamy texture.
- Warm taco shells in grill or air fryer for 3 min.
- Dry lettuce leaves with hand and layer them in taco shell.
- Fill rest of the taco with stuffing.
- Top it generously with Guacamole and serve immediately.

Tips
- You can make your own taco shells at home and use them but its a long process.
- For the topping instead of guacamole, we can use cheese, sour cream or hung curd as well.
- Any stuffing can be used, like red beans garbanzo beans or peas.
