Description: I am in love with Indian Chinese foods. Specially all varieties of Manchurian.There are two versions of Manchurian, wet and dry. Wet Manchurian (with gravy) complements best when drizzled on a serving of steaming hot rice, fried rice or noodles. The dry Vegetable Manchurian is best served as an appetizer and is a favorite in our home.
Ingredients
Cabbage(grated/finely chopped) - 1 cup
Onion (finely chopped) - 1 cup
Spring onion (chopped) - 1 bunch
Green capsicum(finely sliced) - 1
Ginger Garlic paste - 1/2 tsp
Garlic(finely chopped) - 2-3 cloves
Ginger(finely chopped) - 1/2 inch
Green chillies(finely chopped) - 2
Refined flour (maida) - 1/2 cup
Cornflour - 1/2 cup
Soy sauce -1 tbsp
Chilli Sauce - 1 tbsp
Tomato Ketchup - 1 tbsp
Ajinomoto(optional) - 1/2 tsp
Salt as needed
Oil as needed

Method
- Take cabbage, onion, green chillies, ginger garlic paste and salt in a bowl and mix with hand mashing them slightly. Add refined flour, cornflour and mix. Add water only if necessary and make thick mixture.
- Heat sufficient oil in a pan. Shape the vegetable mixture into small balls and gently slide them into the hot oil and deep fry till golden. Drain on absorbent paper.
- Heat 1 tbsps oil in a non stick pan. Add onion, capsicum, ginger, garlic, and fry till done. Now add soy sauce, chilli sauce, tomato ketchup, ajinomoto and 2 tsp of water.
- When the mixture starts boiling add fried balls. Mix till it turns dry.
- Garnish with chopped spring onions and serve hot.
Tips
- You can make vegetable Manchurian similarly by adding some more veggies like beans,carrot etc.
- To make Manchurian gravy, in the sauce add 3 tsp of cornflour mixed in 1 cup of water and some more quantity of the other sauces like chilli, soya, tomato and cook for 2 min.
- All the sauces and their quantity can be changed as per your taste.
